Bikini Recipe

Serves 10 guests

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (produces 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Put the listed ingredients into a pot, heat until it reaches a simmer, agitating until the sugar dissolves. Then, turn off the heat and leave to reach room temperature completely. Transfer to a sealable bottle, seal and store in the fridge, where it will keep for about four weeks.

For the Batch Mix: Combine all the spirits and syrup into a sizeable container, leave to sit for one hour, then strain preferably using cheesecloth, so it's perfectly clear.

For serving: Measure 85ml from the batch mix into a mixing glass filled with ice, and agitate carefully for about 60 seconds to cool it down. Filter to a chilled martini glass or similar, garnish with some cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
